Instructions

  • Prepare the watermelon base: Add watermelon chunks to a blender and puree until smooth.
  • Strain the mixture: Pour the watermelon puree through a fine mesh strainer into a pitcher to remove seeds and pulp.
  • Add sweetener: Stir in honey or agave syrup until completely dissolved.
  • Infuse with herbs: Add fresh herbs to the pitcher and muddle gently to release their essential oils and flavor.
  • Add lime juice: Pour in fresh lime juice and stir to combine.
  • Dilute and chill: Add cold water or sparkling water and stir. Refrigerate for at least 30 minutes to let flavors meld.

Notes

This mocktail keeps well in the refrigerator for up to 2 days, though the herbs may darken slightly. For best flavor, add the sparkling water just before serving if using.
