Ingredients

For 2 servings:

  • 2 cups cubed watermelon
  • 1/2 cucumber sliced
  • 4 oz vodka
  • 2 oz lime juice
  • 1 oz simple syrup
  • Fresh mint leaves
  • Club soda
  • Ice

Use ripe watermelon for the best flavor. English cucumbers work well as they have fewer seeds. Choose a good quality vodka for a clean taste.

Instructions

  • Blend watermelon until smooth. Strain through a fine-mesh sieve.
  • In a shaker, muddle cucumber slices with mint leaves.
  • Add watermelon juice, vodka, lime juice, and simple syrup to the shaker.
  • Fill with ice and shake for 15 seconds.
  • Strain into tall glasses filled with ice.
  • Top with club soda and stir gently.
  • Garnish with cucumber slices and mint sprigs.

Adjust sweetness by adding more or less simple syrup. For a stronger drink, increase the vodka amount.

    Notes

    This cocktail is best served right away. The watermelon juice can be made ahead and stored in the fridge for up to 24 hours.
    For a non-alcoholic version, skip the vodka and add more club soda.
    Try using gin instead of vodka for a different flavor profile.
    To make it look fancy, freeze small watermelon cubes to use as ice cubes.
