  • 4 cups fresh watermelon cubed and seeded

Instructions

  • Prepare the watermelon juice: Cut watermelon into 1-inch cubes. Place in a blender and puree until smooth. Strain through a fine mesh strainer to remove pulp.
  • Muddle the basil: Place basil leaves in a pitcher or large bowl. Gently muddle with a muddler or wooden spoon to release the oils and flavor.
  • Mix the base: Add the strained watermelon juice, lime juice, and honey to the muddled basil. Stir until honey dissolves completely.
  • Chill the mixture: Refrigerate for at least 30 minutes to let the flavors blend.
  • Serve: Fill glasses with ice. Pour the watermelon-basil mixture until glasses are 3/4 full. Top with sparkling water and stir gently.
  • Garnish: Add a basil leaf, lime slice, or watermelon wedge to the rim of each glass.

Notes

This mocktail can be prepared up to 24 hours in advance. Store the base mixture (without sparkling water) in the refrigerator. Add the sparkling water just before serving to maintain carbonation.
For a frozen version, freeze cubed watermelon beforehand and blend with other ingredients. This creates a slushy consistency perfect for very hot days.
Make a virgin watermelon mojito variation by adding more lime and mint leaves. For a sweeter drink, increase honey or try using a naturally sweet watermelon variety like Yellow Crimson.
