Ingredients

  • 4 cups fresh watermelon chunks seeds removed
  • 1/4 cup fresh lime juice about 2-3 limes
  • 2 tablespoons honey or agave syrup
  • 20-25 fresh basil leaves plus extra for garnish
  • 2 cups sparkling water or club soda
  • Ice cubes
  • Watermelon wedges and lime slices for garnish

For a variation, freeze small watermelon chunks to use instead of regular ice cubes. This prevents the drink from becoming diluted as the ice melts.

Instructions

  • Place watermelon chunks in a blender and blend until smooth.
  • Pour the watermelon puree through a fine mesh strainer into a pitcher to remove pulp and seeds.
  • Add lime juice and honey to the strained watermelon juice and stir until honey dissolves completely.
  • Take 15-20 basil leaves and place them in the pitcher. Use a muddler or wooden spoon to gently crush the leaves to release their flavor.
  • Refrigerate the mixture for at least 30 minutes to allow the flavors to blend.
  • When ready to serve, fill glasses halfway with ice cubes.
  • Pour the watermelon-basil mixture into each glass, filling about 2/3 of the way.
  • Top each glass with sparkling water and stir gently.
  • Garnish with fresh basil leaves, watermelon wedges, and lime slices.

Notes

This mocktail can be prepared ahead of time. Make the watermelon-basil base up to 24 hours in advance and keep refrigerated. Add the sparkling water just before serving to maintain carbonation.
For an adult version, add 1 ounce of white rum or vodka per serving. The recipe makes approximately 4-6 servings depending on glass size.
Those watching sugar intake can reduce or omit the honey and use more lime juice for tartness. The natural sweetness of ripe watermelon often provides enough flavor.
The drink looks most attractive when served in clear glasses to showcase its vibrant pink color.
