Ingredients

  • 4 cups fresh watermelon chunks seeds removed
  • 1/4 cup fresh basil leaves plus extra for garnish
  • 2 tablespoons honey or simple syrup
  • 3 tablespoons fresh lime juice about 1-2 limes
  • 1 cup sparkling water or club soda
  • Ice cubes
  • Watermelon wedges for garnish optional
  • Lime slices for garnish optional

For a twist, try substituting mint leaves for basil. The honey can be adjusted based on the sweetness of your watermelon.

Instructions

  • Prepare the watermelon puree: Place watermelon chunks in a blender and blend until smooth. Strain through a fine mesh strainer to remove pulp.
  • Muddle the basil: Place basil leaves in a cocktail shaker or large glass and gently muddle to release oils and flavor.
  • Mix the base: Add 2 cups of watermelon puree, honey, and lime juice to the muddled basil. Stir well until honey dissolves completely.
  • Assemble the mocktail: Fill glasses halfway with ice cubes. Pour the watermelon-basil mixture over ice, filling glasses about 3/4 full.
  • Add finishing touches: Top each glass with sparkling water. Gently stir to combine all ingredients.
  • Garnish and serve: Add a sprig of fresh basil, watermelon wedge, or lime slice to the rim of each glass.

Notes

This recipe makes about 4 servings and can be prepared ahead of time. The watermelon-basil base can be refrigerated for up to 24 hours.
For a stronger basil flavor, let the basil steep in the watermelon mixture for 30 minutes before serving.
The drink can be made into a freezer slush by freezing the watermelon puree with basil in ice cube trays, then blending with other ingredients.
For parties, prepare a large batch in a pitcher without ice, and let guests add their own ice and garnishes.
