Ingredients

  • 1 cup fresh watermelon juice strained
  • 0.5 cup Vita Coco coconut water
  • 0.5 cup sparkling water unsweetened
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon honey or agave nectar
  • 4-5 fresh mint leaves
  • Ice cubes
  • Small watermelon wedge or lime slice for garnish

Instructions

  • Drop the mint leaves and lime juice into the bottom of your glass.
  • Give the mint a light muddle to release those oils.
  • Stir in the honey or agave until it dissolves.
  • Pour in the watermelon juice and coconut water.
  • Add enough ice cubes so the glass is about halfway full.
  • Top it off with sparkling water for that fizz.
  • Stir gently—just enough to mix, not enough to lose all the bubbles.
  • Garnish with a watermelon wedge or a lime slice if you’re feeling fancy.

Notes

Chill the watermelon juice before mixing so the ice won’t melt too fast.
Use honey for a sweeter drink or agave for a lighter taste—both dissolve easily.
Always use fresh mint; add extra for a bigger mint kick.
Scale up for a pitcher, but add sparkling water just before serving.
