Ingredients

  • 1 cup hot water
  • 1 Earl Grey tea bag
  • 0.5 cup fresh blackberries
  • 1 tbsp vanilla syrup or 1/2 teaspoon vanilla extract
  • 1 tbsp lemon juice freshly squeezed
  • 0.5 cup club soda or sparkling water
  • Ice cubes
  • Fresh mint leaves for garnish

Instructions

  • Steep the Earl Grey tea bag in the hot water for about 3–4 minutes, then remove the tea bag and let the tea cool to room temperature.
  • In a small bowl, muddle the fresh blackberries until they are juicy. Strain through a fine mesh strainer if you prefer a smoother texture.
  • In a mixing glass or pitcher, combine the cooled Earl Grey tea, blackberry juice, vanilla syrup, and freshly squeezed lemon juice. Stir gently to mix.
  • Fill a serving glass with ice cubes and pour the mixture in until the glass is about halfway to two-thirds full.
  • Top off with club soda or sparkling water for fizz, then stir gently once to combine without losing too many bubbles.
  • Garnish with fresh mint leaves and a couple of whole blackberries, then serve immediately.

Notes

Fresh blackberries give the best flavor and color, but thawed frozen berries work well if they are out of season. If using frozen, let them soften before muddling so they release more juice.
You can swap the vanilla syrup for vanilla extract if you prefer a less sweet drink; just adjust the amount to taste. Add more lemon juice for extra brightness, or a little more syrup if your berries are very tart.
Serve the mocktail right away so the bubbles stay lively. If you are making a larger batch, keep the tea and blackberry mixture chilled and add the sparkling water just before pouring.
