Ingredients

  • 1 cup pineapple juice chilled; fresh or canned
  • 0.5 cup sparkling water or club soda
  • mint leaves a few, optional, for garnish and extra freshness
  • lime juice a small squeeze, optional, for extra tang
  • ice cubes to fill the glass and keep the drink very cold

Instructions

  • Fill a tall glass or mason jar halfway with ice cubes.
  • Pour the chilled pineapple juice over the ice.
  • Slowly add the sparkling water or club soda so the bubbles stay nice and fizzy.
  • Stir gently with a mixing spoon just until the juice and sparkling water are combined, without knocking out too much carbonation.
  • Taste and adjust: add more pineapple juice for sweetness or more sparkling water if you prefer a lighter, less sweet drink. Garnish with a few mint leaves and a small squeeze of lime if using, then serve immediately while very cold.

Notes

Use very cold pineapple juice and sparkling water so the drink stays refreshing and the fizz lasts longer. Warm juice can make the bubbles disappear quickly and the mocktail feel flat.
If using fresh pineapple juice, strain out the pulp for a smoother sip. For a stronger pineapple flavor that doesn't get watered down, freeze some pineapple juice into ice cubes and use those instead of regular ice.
This mocktail pairs well with light snacks like fresh fruit, chips, or grilled foods, and it's easy to scale up in a pitcher—just multiply the ingredients and mix right before serving to keep the bubbles lively.
