Ingredients

  • 4 oz chilled Pinot Grigio or Sauvignon Blanc
  • 2 oz pineapple juice
  • 1 oz fresh lime juice
  • Club soda or sparkling water
  • Ice cubes
  • Fresh pineapple wedges for garnish
  • Fresh mint leaves for garnish

Instructions

  • Fill a wine glass or tall cocktail glass with ice cubes.
  • Pour the chilled white wine into the glass.
  • Add pineapple juice and fresh lime juice.
  • Top with club soda or sparkling water, leaving about 1/2 inch space at the top.
  • Gently stir with a bar spoon to combine the ingredients.
  • Garnish with a fresh pineapple wedge and mint leaves.

Notes

Store leftover pineapple juice in an airtight container in the fridge for up to 5 days.
Use a dry white wine to balance the sweetness of the fruit juice.
