Ingredients

Base Ingredients:

  • 2 oz pineapple juice
  • 1 oz orange juice freshly squeezed preferred
  • 1 oz coconut cream
  • ½ oz lime juice
  • ½ oz grenadine syrup
  • Ice cubes
  • Club soda or sparkling water

Garnish Options:

  • Pineapple wedge
  • Orange slice
  • Maraschino cherry
  • Mint sprig

The quality of juice affects the final taste. Fresh-squeezed juices offer better flavor than bottled varieties.

Instructions

  • Fill your chilled glass halfway with ice cubes.
  • Pour the pineapple juice, orange juice, and coconut cream into the glass.
  • Stir gently with a bar spoon to mix these ingredients.
  • Slowly pour the lime juice over the back of a spoon to create a layer.
  • Add the grenadine by pouring it slowly down the inside of the glass. It will sink to create the "sunset" effect.
  • Top with a splash of club soda or sparkling water.
  • Garnish with a pineapple wedge, orange slice, and cherry arranged to look like a sunset.
  • Don't stir after adding the grenadine to maintain the layered look

Notes

This mocktail can be prepared in a pitcher for groups. Simply multiply the recipe by the number of servings needed, but add the grenadine individually to each glass for the sunset effect.
For a frozen version, blend the pineapple juice, orange juice, coconut cream, and ice until smooth. Pour into a glass, then add the lime juice and grenadine.
Store leftover juices in sealed containers in the refrigerator. Coconut cream should be used within 5 days.
For a sweeter drink, add ½ oz simple syrup.
