This easygoing cocktail blends white rum, pineapple and lemon, simple syrup, and a foamy egg white with a refreshing fizz—bright, balanced, and made for sunny days.
Add white rum, lemon juice, pineapple juice, simple syrup, and egg white to a shaker.
Dry shake (without ice) for 10 seconds for foam.
Add ice and shake again for 15–20 seconds until cold and frothy.
Strain into a chilled highball glass with ice.
Top with soda water and gently stir. Garnish with pineapple wedge or lemon twist, if desired.
