- 2 cups fresh pineapple chunks or canned in juice, drained
- 1 cup coconut milk canned
- 1/2 cup pineapple juice
- 2 tablespoons lime juice about 1 fresh lime
- 2 tablespoons simple syrup or honey
- 2 cups ice cubes
- 1/4 cup cream of coconut optional, for extra richness
- Fresh mint leaves for garnish
- Pineapple wedges for garnish
For a less sweet version, reduce the simple syrup. The cream of coconut adds richness but can be skipped for a lighter drink. Fresh pineapple gives the best flavor, but canned works too.
