Ingredients

  • 2 cups fresh pineapple chunks or canned in juice, drained
  • 1 cup coconut milk canned
  • 1/2 cup pineapple juice
  • 2 tablespoons lime juice about 1 fresh lime
  • 2 tablespoons simple syrup or honey
  • 2 cups ice cubes
  • 1/4 cup cream of coconut optional, for extra richness
  • Fresh mint leaves for garnish
  • Pineapple wedges for garnish

For a less sweet version, reduce the simple syrup. The cream of coconut adds richness but can be skipped for a lighter drink. Fresh pineapple gives the best flavor, but canned works too.

Instructions

  • Prepare the pineapple: If using fresh pineapple, cut into chunks. If using canned, drain well.
  • Blend the base: Add pineapple chunks, coconut milk, pineapple juice, lime juice, and simple syrup to a blender. Blend until smooth.
  • Add ice: Put ice cubes in the blender with the pineapple mixture. Pulse until the drink reaches a slushy consistency.
  • Finish the drink: Pour the mixture into chilled glasses. If you prefer a smoother texture, strain the mixture before pouring.
  • Garnish and serve: Add a pineapple wedge and mint leaves to each glass. Insert a colorful straw or cocktail umbrella for a tropical touch.
  • Serve immediately for the best flavor and texture.

The mocktail begins to separate if left standing too long.

    Notes

    This recipe makes about 4 servings (8 ounces each). Store any leftover mixture in the refrigerator for up to 24 hours, but expect some separation.
    For a kid-friendly version, reduce the lime juice to 1 tablespoon. Children usually prefer a sweeter drink with less tartness.
