Ingredients

  • 2 cups passionfruit pulp about 8-10 fresh passionfruits
  • 1 cup pineapple juice
  • ½ cup fresh lime juice about 4 limes
  • ¼ cup coconut cream
  • 3 cups sparkling water or soda water
  • 2 tablespoons simple syrup or honey
  • Ice cubes
  • Fresh mint leaves for garnish
  • Pineapple wedges for garnish
  • Edible flowers optional

For a sweeter drink, add more simple syrup. You can substitute frozen passionfruit pulp if fresh isn't available. The coconut cream adds richness, but you can use coconut water for a lighter version.

Instructions

  • Cut passionfruits in half and scoop pulp into a blender.
  • Pulse briefly to break up the seeds slightly.
  • Pour through a strainer into a pitcher, pressing gently to extract juice.
  • Next, add pineapple juice, lime juice, and coconut cream to the pitcher. Stir well with a wooden spoon until combined.
  • Add simple syrup or honey and stir until dissolved. Taste and adjust sweetness if needed.
  • Just before serving, add sparkling water and stir gently. Fill glasses with ice and pour the mocktail mixture over.
  • Garnish each glass with mint leaves, pineapple wedges, and edible flowers if using.

Serve immediately while cold and bubbly.

    Notes

    This recipe serves 4-6 people depending on glass size. The mixture (without sparkling water) can be prepared up to 24 hours ahead and refrigerated. Add the sparkling water just before serving.
    For a frozen version, blend all ingredients except sparkling water with 2 cups of ice until smooth. Pour into glasses and top with a splash of sparkling water.
    Kids love this mocktail too! For a child-friendly version, reduce the lime juice to ¼ cup and increase the simple syrup to 3 tablespoons.
    The passionfruit seeds add texture and visual appeal, but strain thoroughly if you prefer a smoother drink.
