Ingredients

  • 2 cups pineapple juice chilled

  • 2 cups club soda or sparkling water

  • 2 tablespoons sugar
  • 1 tablespoon shredded coconut

All ingredients should be well-chilled before mixing. For a less sweet version, reduce the grenadine or omit the simple syrup. You can substitute frozen fruit for fresh garnishes if needed.

Instructions

  • Prepare glasses: If rimming glasses, mix sugar and shredded coconut on a small plate. Rub a lime wedge around the rim of each glass, then dip into the sugar mixture.
  • Mix base: In the punch bowl, combine pineapple juice, orange juice, lime juice, and coconut cream. Stir until the coconut cream is fully incorporated.
  • Add color: Slowly pour in the grenadine, allowing it to sink to the bottom for a gradient effect. Do not stir yet.
  • Finish mixture: Gently add the club soda and stir very lightly to combine without losing carbonation.
  • Serve: Fill glasses halfway with ice cubes, then pour the punch mixture over the ice. Garnish each glass with fresh fruit pieces.

For a frozen version, blend the non-carbonated ingredients with 2 cups of ice until smooth, then pour into glasses and top with a splash of club soda.

    Notes

    This mocktail can be prepared up to 4 hours in advance, but add the club soda just before serving to maintain fizziness. Store covered in the refrigerator.
    For a more vibrant color, add 1-2 drops of natural food coloring or use fruit-based colorants like blue spirulina for a striking blue tropical look.
    Kids love this drink when served with colorful paper umbrellas and crazy straws. For adults who want an alcoholic version, add 1.5 oz of white rum or coconut rum per serving.
