Ingredients

  • 2 ripe mangoes peeled and chopped (or 1 cup mango puree)
  • 1 cup pineapple juice fresh or canned
  • ¼ cup lime juice about 2-3 fresh limes
  • 2 tablespoons simple syrup or honey
  • 1 cup coconut water
  • 2 cups ice cubes
  • Club soda or sparkling water
  • Fresh mint leaves
  • Lime slices for garnish
  • Optional: 1 tablespoon grenadine for color contrast

Instructions

  • Peel and dice the mangoes. Place mango chunks in a blender and process until smooth.
  • Add pineapple juice, lime juice, and simple syrup to the blender with the mango puree. Blend for 10-15 seconds until well combined.
  • Fill tall glasses halfway with ice cubes.
  • Pour the mango mixture over the ice, filling each glass about ⅔ full.
  • Top each glass with coconut water and a splash of club soda.
  • Stir gently to combine all ingredients without losing carbonation.
  • Garnish with fresh mint leaves and a lime slice on the rim of each glass.
  • For a sunset effect, slowly pour grenadine down the inside of the glass to create a layered look.
  • Serve immediately for best flavor and presentation.
