Ingredients

  • 2 ripe mangoes peeled and diced (about 2 cups)
  • 1 cup pineapple juice
  • ½ cup coconut cream
  • 3 tablespoons lime juice about 2 limes
  • 2 tablespoons honey or agave syrup
  • 1 cup ice cubes
  • Mint leaves for garnish
  • Pineapple wedges for garnish
  • Sparkling water optional, for added fizz

Choose mangoes that yield slightly to gentle pressure for best flavor. Fresh lime juice works better than bottled varieties.

Instructions

  • Add diced mango to blender and puree until smooth.
  • Strain the mango puree through a fine mesh strainer to remove any fibrous pieces.
  • In a cocktail shaker or large pitcher, combine the strained mango puree, pineapple juice, coconut cream, lime juice, and honey.
  • Mix well until all ingredients are fully combined and the honey is dissolved.
  • Fill serving glasses with ice cubes.
  • Pour the mocktail mixture over the ice.
  • Top with a splash of sparkling water if desired.
  • Garnish with mint leaves and pineapple wedges.
  • Chill ingredients beforehand for the best taste.

The mocktail can be prepared in advance (minus the ice) and refrigerated for up to 24 hours.

    Notes

    This recipe makes about 4 servings. For a frozen version, blend all ingredients with ice instead of pouring over ice.
    Adjust sweetness by adding more or less honey based on the natural sweetness of your mangoes.
    For a lower-calorie option, use light coconut milk instead of coconut cream.
    Store any leftover mocktail in the refrigerator for up to 2 days. The mixture may separate, so stir well before serving again.
