Ingredients

  • 8-10 fresh mint leaves
  • 1 lime cut into quarters
  • 2 tablespoons simple syrup equal parts sugar and water, dissolved
  • 1/4 cup coconut cream
  • 1/2 cup coconut water
  • 1 cup club soda or sparkling water
  • Ice cubes
  • Mint sprigs and lime wheels for garnish
  • 1 tablespoon toasted coconut flakes optional

The quality of ingredients matters in this recipe. For the best flavor, use fresh mint leaves rather than dried. Coconut cream provides richness, while coconut water adds a subtle sweetness without being too heavy.

Instructions

  • Place mint leaves and 2 lime quarters in the bottom of your glass or shaker.
  • Gently muddle the mint and lime to release the flavors, but don't crush too hard.
  • Add the simple syrup, coconut cream, and coconut water to the glass.
  • Fill the glass 2/3 full with ice cubes.
  • Stir all ingredients well for about 15 seconds.
  • Top with club soda and stir gently to combine.
  • Garnish with a mint sprig, lime wheel, and toasted coconut flakes if using.
  • Serve immediately with a straw.

For a slushie version, blend all ingredients except club soda with ice until smooth. Pour into glasses and top with club soda just before serving.

    Notes

    This mocktail can be prepared in advance up to step 5. Add the club soda just before serving to maintain carbonation.
    For a sweeter drink, increase the simple syrup to 3 tablespoons. You can also substitute honey or agave nectar for the simple syrup.
    Make it kid-friendly by replacing club soda with lemon-lime soda. For a creamier texture, use more coconut cream and less coconut water.
    Store leftover mint in a glass of water like fresh flowers to keep it fresh. Coconut cream can be frozen in ice cube trays for future use in smoothies or mocktails.
