Ingredients

  • 1 oz blue curacao blue liqueur
  • 1 oz gin or vodka gin for herbal, vodka for smooth
  • 2 oz pineapple juice
  • 0.5 oz lime juice fresh squeezed
  • 3 oz prosecco chilled
  • 1 oz club soda or sparkling water
  • ice cubes
  • 1 sprig fresh mint for garnish
  • edible flowers optional, for garnish
  • 0.5 oz coconut rum or sour mix optional, for variation

Instructions

  • Fill the cocktail shaker halfway with ice cubes.
  • Add blue curacao, gin or vodka, pineapple juice, and lime juice.
  • Shake lightly for about 10 seconds to blend.
  • Strain into a wine glass filled with fresh ice.
  • Top with chilled prosecco and a splash of club soda or sparkling water.
  • Stir gently with a bar spoon to keep the fizz.
  • Garnish with a mint sprig and edible flowers if desired. Serve immediately.

Notes

Use gin for a herbal edge, vodka for a cleaner finish. Add coconut rum or sour mix for more tropical flavor. For a mocktail, skip the booze and double the sparkling water. Always serve cold with plenty of ice for maximum refreshment.
