This French Caribbean classic celebrates rhum agricole, fresh lime, and cane syrup for a punchy, grassy, and lightly sweet sipper—true island spirit in a glass.
Cut a small lime disc (about 1 inch wide) with peel and a little flesh.
Drop the lime disc into the bottom of an Old Fashioned glass.
Add cane syrup or raw sugar. Press gently with a bar spoon to release oils and juice.
Pour in the rhum agricole blanc.
Stir well until sugar dissolves. Add a couple of small ice cubes if desired, or serve neat.
