Equipment

  • Old fashioned glass
  • Bar spoon
  • Paring knife
  • Cutting Board
  • Measuring jigger

Ingredients

  • 2 oz rhum agricole blanc sugarcane rum
  • 0.25 oz cane syrup or raw sugar
  • 1 small lime disc about 1 inch wide, with peel
  • ice cubes optional

Instructions

  • Cut a small lime disc (about 1 inch wide) with peel and a little flesh.
  • Drop the lime disc into the bottom of an Old Fashioned glass.
  • Add cane syrup or raw sugar. Press gently with a bar spoon to release oils and juice.
  • Pour in the rhum agricole blanc.
  • Stir well until sugar dissolves. Add a couple of small ice cubes if desired, or serve neat.

Notes

Rhum agricole is key for grassy flavor. Let guests adjust sugar and lime to taste—the Martinique tradition. Always use fresh lime, never bottled juice. Chill glassware for a crisp sip.
