  • Cocktail shaker
  • Muddler or wooden spoon
  • Strainer
  • Highball glass
  • Measuring jigger
  • Ice

Ingredients

  • 2 oz 60 ml limoncello
  • 1 oz 30 ml vodka
  • 1/2 oz 15 ml fresh lemon juice
  • 3-4 sprigs of fresh thyme
  • Club soda
  • Ice cubes
  • Lemon wheel and thyme sprig for garnish
  • Use good quality limoncello for the best flavor. Fresh lemon juice is much better than bottled. Choose firm bright green thyme sprigs.

Instructions

  • Put 2-3 thyme sprigs in the shaker. Muddle gently to release the oils.
  • Add limoncello, vodka, lemon juice, and ice to the shaker.
  • Shake well for 10-15 seconds.
  • Fill a highball glass with ice.
  • Strain the mixture into the glass.
  • Top with club soda. Stir gently.
  • Garnish with a lemon wheel and fresh thyme sprig.

Serve right away while it's cold and bubbly. The thyme flavor will get stronger as it sits.

    Notes

    This recipe serves one. To make a pitcher, multiply the ingredients by the number of servings. Add club soda just before serving.
    You can adjust the sweetness by using more or less limoncello. For a stronger thyme flavor, let the muddled sprigs sit in the liquor for a few minutes before shaking.
    Try using different herbs like basil or rosemary for variety. Meyer lemons can add a nice twist when in season.
    For a non-alcoholic version, replace the limoncello and vodka with lemonade and a splash of elderflower syrup.
