Use good quality limoncello for the best flavor. Fresh lemon juice is much better than bottled. Choose firmbright green thyme sprigs.
Instructions
Put 2-3 thyme sprigs in the shaker. Muddle gently to release the oils.
Add limoncello, vodka, lemon juice, and ice to the shaker.
Shake well for 10-15 seconds.
Fill a highball glass with ice.
Strain the mixture into the glass.
Top with club soda. Stir gently.
Garnish with a lemon wheel and fresh thyme sprig.
Serve right away while it's cold and bubbly. The thyme flavor will get stronger as it sits.

This recipe serves one. To make a pitcher, multiply the ingredients by the number of servings. Add club soda just before serving.You can adjust the sweetness by using more or less limoncello.
