Equipment

  • Cocktail shaker
  • Hawthorne strainer
  • Fine-mesh strainer
  • Jigger or measuring tool
  • Ice
  • Rocks glass
  • Small sharp knife and cutting board
  • Citrus juicer

Ingredients

  • 2 oz blanco tequila
  • 1 oz fresh lime juice
  • 3/4 oz simple syrup
  • 1 fresh egg white
  • 2-3 dashes Angostura bitters
  • Ice for shaking
  • Lime wheel for garnish

Instructions

  • Separate one egg white into the shaker
  • Add tequila, lime juice, and simple syrup
  • Dry shake without ice for 10-15 seconds to emulsify the egg white
  • Add ice and shake again for 10-15 seconds until well-chilled
  • Double strain into a chilled rocks glass using both strainers
  • Add 2-3 dashes of Angostura bitters on top of the foam
  • Garnish with a lime wheel

Notes

The egg white creates a smooth, silky texture and beautiful foam top. Skip it for a simpler version.
Fresh lime juice makes a big difference compared to bottled juice.
Store simple syrup in the fridge for up to 2 weeks.
For extra flavor, try adding 1/4 oz agave nectar in place of some simple syrup.
Room temperature egg whites foam better than cold ones.
