Ingredients
2ozblanco tequila
1ozfresh lime juice
3/4ozsimple syrup
1fresh egg white
2-3dashes Angostura bitters
Ice for shaking
Lime wheel for garnish
Instructions
Separate one egg white into the shaker
Add tequila, lime juice, and simple syrup
Dry shake without ice for 10-15 seconds to emulsify the egg white
Add ice and shake again for 10-15 seconds until well-chilled
Double strain into a chilled rocks glass using both strainers
Add 2-3 dashes of Angostura bitters on top of the foam
Garnish with a lime wheel
