Ingredients

  • 2 oz reposado tequila or mezcal
  • 0.75 oz honey syrup 1 part honey, 1 part warm water
  • 0.75 oz fresh lemon juice
  • 2 dashes Angostura bitters
  • Ice cubes
  • Lemon peel for garnish

Instructions

  • Fill your cocktail shaker with ice.
  • Add the tequila or mezcal, honey syrup, and fresh lemon juice to the shaker.
  • Shake vigorously for about 15 seconds, until the shaker feels frosty on the outside.
  • Strain the cocktail into a highball glass filled with fresh ice.
  • Dash the Angostura bitters over the top of the drink.
  • Twist a strip of lemon peel over the glass to release the oils, then drop it in as a garnish.

Notes

Use reposado tequila for a smooth, slightly oaky flavor, or swap in mezcal if you want a smokier twist. Honey syrup blends more easily than straight honey, so the drink stays silky instead of sticky.
Freshly squeezed lemon juice makes a big difference here—bottled juice tends to taste flat. Taste the drink before serving: if it is too sweet, add a few extra drops of lemon juice; if it is too tart, shake in a bit more honey syrup.
Serve this cocktail ice-cold and enjoy right away. The lemon peel and bitters together create a lovely aroma that hits before the first sip.
