Fresh tangerine juice is bestbut store-bought works too. You can swap vodka for gin if you prefer.
Instructions
Put 2-3 thyme sprigs in the shaker and muddle gently.
Add tangerine juice, vodka, and simple syrup.
Fill the shaker with ice and shake for 10-15 seconds.
Strain into a highball glass filled with ice.
Top with soda water.
Stir gently to mix.
Garnish with a tangerine slice and thyme sprig.
Taste and adjust sweetness if needed. For a stronger thyme flavor, let the muddled herbs sit in the liquid for a few minutes before shaking.
Notes
This recipe is easy to scale up for parties. Mix a large batch without ice or soda water, then chill. When ready to serve, pour over ice and top with soda water. You can make it non-alcoholic by skipping the vodka and adding more soda water. For a different twist, try using other citrus fruits like grapefruit or blood orange. The cocktail is best enjoyed fresh, but you can prep the juice and herbs ahead of time. Store them in the fridge until you're ready to mix.
