A creamy, nourishing mocktail blending roasted sweet potatoes, almond milk, and cozy spices. Healthy, fiber-rich, and delicious for breakfast or as a cold snack—like dessert, but good for you!
Add roasted sweet potatoes and frozen riced cauliflower to blender.
Pour in almond milk (or coconut milk).
Add almond butter, vanilla protein powder, flax seeds, cinnamon, pumpkin pie spice, and ginger.
Add ice cubes if you want it thicker and colder.
Blend on high until smooth, scraping down sides as needed.
Taste and add sweetener (honey or maple syrup) if needed. Blend again to mix.
Pour into glasses and enjoy immediately.
Notes
Roast sweet potatoes ahead for convenience. Swap almond butter for another nut butter if needed. Cauliflower adds creaminess but no flavor. Adjust spices to taste. For extra protein, use Greek yogurt or more protein powder.
