Ingredients

  • 1 medium sweet potato cooked and cooled
  • 1 cup milk dairy or plant-based
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon pumpkin spice blend
  • 0.25 teaspoon cinnamon
  • pinch salt
  • 1 cup ice cubes
  • whipped cream optional, for topping
  • extra cinnamon optional, for garnish
  • crushed graham crackers optional, for topping

Instructions

  • Peel and cook the sweet potato, then let it cool.
  • Add sweet potato, milk, maple syrup, vanilla, pumpkin spice, cinnamon, salt, and ice to the blender.
  • Blend until smooth and creamy. Taste and add more maple syrup if desired.
  • Pour into tall glasses. Top with whipped cream, a sprinkle of cinnamon, or crushed graham crackers if desired.

Notes

Roast sweet potato for best flavor, or microwave for speed. Plant-based milks work great. Add yogurt for extra creaminess or more ice for a thicker shake. Dress it up with toppings for dessert or leave plain for a lighter treat.
