Ingredients

  • 4 cups cubed watermelon seeds removed
  • 2 cups fresh strawberries hulled and halved
  • 1/4 cup fresh lime juice about 2-3 limes
  • 2 tablespoons honey or maple syrup adjust to taste
  • 3 cups cold sparkling water
  • 1 cup cold water
  • Ice cubes
  • For garnish: Watermelon wedges strawberry slices, fresh mint leaves

The quality of fruit matters in this recipe. Choose ripe, sweet watermelon and bright red strawberries for the best flavor.

Instructions

  • Prepare the fruit base: Add the watermelon cubes and strawberries to your blender. Blend until completely smooth, about 30-45 seconds.
  • Strain the mixture: Pour the blended fruit through a fine mesh strainer into a large pitcher. Press gently with a spoon to extract all the juice while leaving pulp behind.
  • Add sweetness and citrus: Stir in the lime juice and honey or maple syrup until completely dissolved.
  • Mix in liquids: Add the cold water and stir well to combine all ingredients.
  • Chill the mixture: Refrigerate for at least 1 hour to let flavors meld together.
  • Serve: Just before serving, add the sparkling water and stir gently. Pour over ice in individual glasses and garnish with watermelon wedges, strawberry slices, and mint leaves.

Notes

This mocktail can be prepared up to 24 hours in advance (without the sparkling water). Add the sparkling water just before serving to maintain carbonation.
For a frozen version, freeze the fruit puree in ice cube trays and blend with sparkling water for a slushy texture. Adults can turn this into a cocktail by adding 1 ounce of vodka or white rum per serving.
You can substitute other berries like raspberries or blackberries for some of the strawberries. For extra flavor, try adding 1/4 teaspoon of vanilla extract or a few basil leaves during blending.
The recipe serves approximately 6-8 people depending on glass size.
