  • Sharp knife
  • Muddler or wooden spoon
  • Mixing glass or shaker
  • Strainer
  • Tall serving glass
  • Measuring cups/spoons

Ingredients

  • 1 cup fresh strawberries hulled and sliced
  • 0.5 cup pomegranate juice 100% juice, no added sugar
  • 1 tablespoon honey or simple syrup add more or less to taste
  • 4-5 fresh mint leaves lightly torn
  • 0.5 cup sparkling water or club soda
  • ice cubes enough to fill glass
  • extra strawberry slices and mint sprigs for garnish

Instructions

  • Toss sliced strawberries and mint leaves in a mixing glass.
  • Muddle gently with a spoon or muddler until juicy.
  • Pour in the pomegranate juice and honey (or syrup).
  • Stir or shake until the sweetener blends in.
  • Fill a tall glass with ice cubes.
  • Strain the fruit mixture over the ice.
  • Top off with sparkling water and give it a gentle stir.
  • Add a few strawberry slices and a mint sprig on top for garnish. Serve immediately.

Notes

Use ripe strawberries for the best flavor. Adjust sweetener if pomegranate juice is very tart. Clap the mint leaves before muddling for a stronger aroma. Prep the fruit base ahead, but add sparkling water just before serving for best fizz.
