Instructions
I rinse and hull the strawberries, then blend them with lemon juice and simple syrup until smooth.
Next, I pour the mixture through a fine mesh strainer into a large pitcher to remove seeds and pulp.
I add cranberry juice and pineapple juice to the pitcher and stir with a mixing spoon.
I gently pour in the sparkling water or club soda and give everything a light stir.
I add enough ice cubes to chill the punch without watering it down too much.
I serve the punch in tall glasses, garnishing each with sliced strawberries, lemon wheels, and a mint sprig.
Notes
I like to adjust the sweetness by adding more simple syrup if desired, especially if the strawberries are tart.For a less sweet punch, I replace some cranberry juice with extra sparkling water.If I want to prepare ahead, I mix everything except the sparkling water and ice.
