Ingredients

  • 2 cups fresh strawberries hulled and sliced
  • 1/4 cup fresh mint leaves plus extra for garnish
  • 3 tablespoons honey or agave syrup adjust to taste
  • 2 tablespoons fresh lime juice
  • 4 cups sparkling water or club soda chilled
  • 1 cup ice cubes
  • Lime slices for garnish
  • Optional: 1 cucumber thinly sliced

Choose ripe, bright red strawberries for the best flavor. If fresh strawberries aren't available, frozen ones will work but may need extra sweetener. The mint should be fresh and bright green without any brown spots.

Instructions

  • Place strawberries in a blender and puree until smooth.
  • Strain the puree through a fine mesh strainer into a pitcher to remove seeds.
  • In a separate glass, muddle the mint leaves gently to release their flavor and aroma.
  • Add the muddled mint to the strawberry puree in the pitcher.
  • Stir in the honey or agave syrup and lime juice until completely dissolved.
  • Add the sparkling water to the pitcher and stir gently to combine.
  • Fill glasses with ice cubes and pour the strawberry mint mixture over the ice.
  • Garnish each glass with a mint sprig and lime slice before serving.

Let the mixture chill in the refrigerator for 30 minutes before serving for the best flavor development.

    Notes

    This recipe serves 4-6 people and can be prepared up to 4 hours ahead of time. Keep the sparkling water separate until ready to serve to maintain carbonation.
    For a stronger mint flavor, let the mint leaves steep in the strawberry mixture for at least an hour before adding the sparkling water.
    To make this drink ahead of time, prepare the strawberry-mint base and refrigerate. Add the sparkling water just before serving.
    For a sweeter version, add more honey or use lemonade instead of some of the sparkling water. A splash of coconut water adds tropical notes to the drink.
