Ingredients

  • 2 cups fresh strawberries hulled and sliced
  • 1/4 cup fresh lime juice about 2-3 limes
  • 3 tablespoons honey or simple syrup
  • 2 cups sparkling water or club soda
  • 1 cup ice cubes
  • Fresh strawberries and lime slices for garnish
  • Fresh mint leaves optional garnish

For a sweeter drink, add more honey or simple syrup to taste.

Instructions

  • Prepare the strawberry puree: Place hulled and sliced strawberries in a blender. Blend until smooth, about 30-45 seconds.
  • Strain the puree: Pour the blended strawberries through a fine mesh strainer into a bowl, pressing with a spoon to extract all the juice. This removes seeds and creates a smoother texture.
  • Mix the base: In a pitcher, combine the strained strawberry puree, fresh lime juice, and honey or simple syrup. Stir until the sweetener dissolves completely.
  • Add the fizz: Slowly pour in the sparkling water and stir gently to combine without losing carbonation.
  • Serve: Fill glasses with ice cubes. Pour the strawberry lime mixture over the ice. Garnish with fresh strawberry slices, lime wedges, and mint leaves if desired.

The mocktail is best served immediately while still fizzy and cold.

    Notes

    This recipe makes about 4 servings and can be easily doubled for parties.
    The strawberry-lime base (without sparkling water) can be prepared up to 24 hours ahead and stored in the refrigerator.
    For a frozen version, blend the strawberry mixture with ice instead of adding ice to the glass. Add a pinch of salt to enhance the flavors without making it taste salty.
    Kids love this drink, but for an adult version, add 1.5 oz of white rum or vodka per serving.
    Create a layered effect by not stirring the drink completely - this makes for a pretty presentation with gradient colors.
