Equipment

  • Large pitcher (64 oz/2L capacity)
  • Blender or food processor
  • Fine-mesh strainer
  • Measuring cups and spoons
  • Citrus juicer
  • Long spoon for stirring.
  • Tall glasses for serving

Ingredients

  • 2 cups fresh strawberries hulled and sliced
  • 1 cup fresh lemon juice about 6-8 lemons
  • 1/2 cup honey or simple syrup
  • 4 cups cold water
  • 2 cups sparkling water
  • Fresh mint leaves
  • Ice cubes
  • Extra strawberries and lemon slices for garnish

Instructions

  • Place the strawberries in a blender and blend until smooth.
  • Pour the strawberry puree through a fine-mesh strainer into the pitcher to remove seeds.
  • Add lemon juice and honey to the pitcher. Stir until the honey dissolves completely.
  • Pour in the cold water and mix well.
  • Just before serving, add the sparkling water and stir gently.
  • Fill glasses with ice and pour the mocktail mixture over it.
  • Garnish each glass with fresh strawberries, lemon slices, and mint leaves.

Notes

Store the base mixture without sparkling water in the fridge for up to 3 days.
Add sparkling water only when ready to serve to keep the fizz fresh.
For a sweeter drink, add more honey or simple syrup one tablespoon at a time.
Replace fresh strawberries with frozen ones in winter months. Let them thaw before blending.
