Place the strawberries in a blender and blend until smooth.
Pour the strawberry puree through a fine-mesh strainer into the pitcher to remove seeds.
Add lemon juice and honey to the pitcher. Stir until the honey dissolves completely.
Pour in the cold water and mix well.
Just before serving, add the sparkling water and stir gently.
Fill glasses with ice and pour the mocktail mixture over it.
Garnish each glass with fresh strawberries, lemon slices, and mint leaves.
Notes
Store the base mixture without sparkling water in the fridge for up to 3 days.Add sparkling water only when ready to serve to keep the fizz fresh.For a sweeter drink, add more honey or simple syrup one tablespoon at a time.Replace fresh strawberries with frozen ones in winter months.
