Instructions
Simmer 1/2 cup sugar, 1/2 cup water, and 1 tbsp dried lavender in a small saucepan for 5 minutes to make lavender syrup.
Strain out lavender buds and let the syrup cool.
In a pitcher, muddle the sliced strawberries until juicy.
Add fresh lemon juice, lavender syrup, and honey or simple syrup.
Pour in cold water or sparkling water and stir well.
Taste and add more sweetener if needed.
Fill glasses with ice and pour the mocktail over.
Garnish with lemon slices and a fresh lavender sprig if desired.
Notes
Always use culinary lavender for the syrup. Adjust sweetness to your liking. Sparkling water adds fizz; cold water keeps it classic. Chill the pitcher before serving for extra refreshment.
