Ingredients

  • 1 cup fresh strawberries hulled and sliced
  • 0.5 cup lavender syrup see instructions
  • 1 cup fresh lemon juice about 4–5 lemons
  • 3 cups cold water or sparkling water
  • 2-3 tablespoons honey or simple syrup adjust to taste
  • ice cubes for serving
  • lemon slices for garnish
  • fresh lavender sprigs for garnish (optional)

Instructions

  • Simmer 1/2 cup sugar, 1/2 cup water, and 1 tbsp dried lavender in a small saucepan for 5 minutes to make lavender syrup.
  • Strain out lavender buds and let the syrup cool.
  • In a pitcher, muddle the sliced strawberries until juicy.
  • Add fresh lemon juice, lavender syrup, and honey or simple syrup.
  • Pour in cold water or sparkling water and stir well.
  • Taste and add more sweetener if needed.
  • Fill glasses with ice and pour the mocktail over.
  • Garnish with lemon slices and a fresh lavender sprig if desired.

Notes

Always use culinary lavender for the syrup. Adjust sweetness to your liking. Sparkling water adds fizz; cold water keeps it classic. Chill the pitcher before serving for extra refreshment.
