  • Fine-mesh strainer
  • Small bowl or container
  • Jigger or measuring tool
  • Champagne flutes
  • Bar spoon

Ingredients

  • 1 cup ripe strawberries hulled
  • 2 tsp sugar adjust to taste
  • 1 tsp fresh lemon juice
  • 1 oz orange liqueur Grand Marnier, Cointreau, or similar
  • 1 bottle chilled brut champagne or prosecco
  • extra strawberries for garnish

Instructions

  • Blend strawberries, sugar, and lemon juice until smooth.
  • Strain puree through fine mesh sieve.
  • Add 1–2 tablespoons puree to each chilled flute.
  • Pour in orange liqueur.
  • Slowly top with chilled champagne or prosecco.
  • Stir gently with a bar spoon.
  • Garnish with a fresh strawberry on the rim.

Notes

Brut champagne is best to keep the drink from being too sweet. Prosecco works too, but you may want less sugar. The strawberry puree can be made ahead and refrigerated for up to two days. For a stronger drink, add a splash of vodka; for a lighter one, swap sparkling water for liqueur.
