Ingredients

  • 6 fresh strawberries sliced
  • 4-5 fresh basil leaves
  • 6-8 fresh mint leaves
  • 2 oz white rum
  • 1 oz fresh lime juice
  • 1 oz simple syrup
  • Club soda
  • Ice cubes
  • Extra strawberries and basil for garnish

Instructions

  • Muddle strawberries, basil leaves, and mint leaves in a cocktail shaker until the fruit releases its juices and the herbs become fragrant.
  • Add rum, lime juice, and simple syrup to the shaker. Fill with ice and shake for 15-20 seconds.
  • Strain the mixture into a Collins glass filled with fresh ice. Top with club soda and stir gently.
  • Garnish with a fresh strawberry and basil leaf. Serve right away while cold and fizzy.

Notes

Make simple syrup by mixing equal parts sugar and water in a pan. Heat until sugar dissolves, then cool before using.
Fresh fruit works best - frozen strawberries can make the drink too watery.
The drink can be made non-alcoholic by replacing rum with extra club soda.
Store leftover simple syrup in an airtight container in the fridge for up to 2 weeks.
