Muddle strawberries, basil leaves, and mint leaves in a cocktail shaker until the fruit releases its juices and the herbs become fragrant.
Add rum, lime juice, and simple syrup to the shaker. Fill with ice and shake for 15-20 seconds.
Strain the mixture into a Collins glass filled with fresh ice. Top with club soda and stir gently.
Garnish with a fresh strawberry and basil leaf. Serve right away while cold and fizzy.
Notes
Make simple syrup by mixing equal parts sugar and water in a pan. Heat until sugar dissolves, then cool before using.Fresh fruit works best - frozen strawberries can make the drink too watery. The drink can be made non-alcoholic by replacing rum with extra club soda.Store leftover simple syrup in an airtight container in the fridge for up to 2 weeks.
