Ingredients

fresh blackberries
plus a few extra for garnish
1/2

fresh lemon juice
about 2–3 lemons

–4 tablespoons honey or agave syrup
adjust to taste

cold sparkling water or club soda

ice cubes

Optional: 2–4 lemon slices for garnish
Instructions
Wash the blackberries and place them in the bottom of a pitcher.
Use a muddler or fork to mash the blackberries until they release their juice.
Add 1/2 cup lemon juice and 3–4 tablespoons honey (or agave syrup) to the pitcher.
Stir well to ensure the sweetener dissolves.
Pour in 2 cups of sparkling water or club soda and stir gently to keep the fizz.
Fill two tall glasses halfway with ice cubes.
Strain the blackberry mixture into the glasses using a fine mesh sieve to remove seeds and pulp.
Garnish each glass with extra blackberries and lemon slices if desired.
Serve immediately while cold and fizzy.
