Ingredients

  • 4 cups fresh watermelon cubed and seeded
  • 1 jalapeño sliced (seeds removed for less heat)
  • 1/4 cup fresh lime juice about 2-3 limes
  • 2 tablespoons honey or agave syrup
  • 8-10 fresh mint leaves plus more for garnish
  • 1/2 teaspoon grated ginger
  • Sparkling water or club soda
  • Ice cubes
  • Watermelon wedges and lime slices for garnish
  • For a less spicy version use only half a jalapeño or remove it completely.

The quality of watermelon matters greatly – choose a ripe, sweet watermelon for the best flavor.

Instructions

  • Prepare the watermelon base: Place watermelon cubes in a blender and blend until smooth. Strain through a fine mesh sieve to remove pulp and seeds.
  • Create the spicy mix: In a cocktail shaker or large glass, muddle 2-3 jalapeño slices with mint leaves and grated ginger. Press firmly to release the oils and flavors.
  • Combine the liquids: Add the strained watermelon juice, lime juice, and honey to the muddled mixture. Stir well until the honey dissolves completely.
  • Chill the mixture: Refrigerate for at least 30 minutes to allow flavors to blend. This step can be done up to 24 hours in advance.
  • Assemble the mocktail: Fill glasses with ice cubes. Pour the watermelon mixture until glasses are about 3/4 full. Top with sparkling water.
  • Garnish and serve: Add a watermelon wedge, lime slice, and fresh mint leaves to each glass. Stir gently before drinking.

Notes

This recipe makes about 4 servings. The spice level can be adjusted by changing the amount of jalapeño or by leaving the seeds in for extra heat.
The base mixture (without sparkling water) keeps well in the refrigerator for up to 2 days. Add the sparkling water just before serving to maintain the fizz.
For a sweeter drink, add more honey or agave. For a more tart version, increase the lime juice. You can also add a pinch of salt to enhance the watermelon's natural sweetness.
Try freezing watermelon cubes ahead of time to use instead of ice cubes. This prevents dilution while keeping the drink cold and flavorful.
