Instructions
Rim two margarita glasses with lime juice and dip in Tajin seasoning. Set aside.
Add 2-3 jalapeno slices to a cocktail shaker and muddle gently to release oils.
Pour tequila, triple sec, pineapple juice, and lime juice into the shaker.
Fill shaker with ice and shake vigorously for 15-20 seconds.
Strain mixture into the prepared glasses filled with fresh ice.
Garnish each glass with pineapple wedges, lime wheels, and extra jalapeno slices if desired.
Notes
Store leftover pineapple juice in an airtight container for up to 3 days.Adjust the spice level by using more or fewer jalapeno slices. Remove seeds for less heat.Make a non-alcoholic version by replacing tequila and triple sec with extra pineapple juice and a splash of orange juice.For best results, use fresh pineapple juice rather than canned. This makes a big difference in taste.
