Equipment

  • Large pitcher (64 oz capacity)
  • Citrus juicer
  • Sharp knife
  • Cutting Board
  • Blender
  • Fine-mesh strainer
  • Long spoon for stirring.
  • Measuring cups and spoons

Ingredients

  • 4 cups fresh pineapple chunks
  • 1 cup fresh lime juice about 8-10 limes
  • 1 jalapeño pepper sliced
  • 6 cups cold water
  • 1/2 cup simple syrup
  • Ice cubes
  • Mint leaves for garnish
  • Extra pineapple chunks for garnish
  • Lime wheels for garnish

Instructions

  • Blend pineapple chunks until smooth. Strain through a fine mesh strainer into the pitcher.
  • Add fresh lime juice to the pitcher with strained pineapple juice.
  • Remove seeds from jalapeño slices. Then, add 3-4 slices to the pitcher.
  • Pour in cold water and simple syrup. Stir well to combine.
  • Let the mixture chill for 30 minutes so flavors can blend.
  • Taste and adjust sweetness by adding more simple syrup if needed.
  • Fill glasses with ice and pour the limeade mixture.
  • Garnish with mint leaves, pineapple chunks, and lime wheels.

Notes

Store leftover limeade in the fridge for up to 2 days.
Remove jalapeño slices after 2 hours to prevent the drink from becoming too spicy.
For a milder version, use only 1-2 jalapeño slices or remove seeds before adding.
Make ahead tip: Prepare the base mixture without water and store concentrated. Add water just before serving.
