Ingredients

  • 2 cups fresh pineapple chunks
  • 1- inch piece fresh ginger peeled and sliced
  • 1/4 teaspoon cayenne pepper adjust to taste
  • 1/4 cup fresh lime juice about 2-3 limes
  • 2 tablespoons honey or agave syrup
  • 4 cups sparkling water or club soda
  • Ice cubes
  • Fresh mint leaves for garnish
  • Lime wheels for garnish
  • 1-2 thin slices of jalapeño optional, for extra heat

The quality of pineapple matters greatly in this recipe.

Instructions

  • Blend the pineapple chunks until smooth. Strain through a fine mesh sieve to remove pulp.
  • In a large pitcher, combine the strained pineapple juice with sliced ginger. Add cayenne pepper, lime juice, and honey. Stir until honey dissolves completely.
  • Let the mixture steep for at least 30 minutes in the refrigerator to allow the ginger flavor to infuse.
  • Strain the mixture again to remove the ginger pieces.
  • Fill glasses with ice. Pour the pineapple-ginger mixture halfway up each glass.
  • Top with sparkling water and stir gently to combine.
  • Garnish with mint leaves, lime wheels, and a thin slice of jalapeño if desired.
  • Serve immediately while cold and bubbly.

For a stronger ginger flavor, muddle the ginger slices before adding them to the juice.

    Notes

    This mocktail can be prepared up to 24 hours in advance (without the sparkling water). Store the base mixture in an airtight container in the refrigerator. Add the sparkling water just before serving to maintain carbonation.
    For a less spicy version, reduce or omit the cayenne pepper and jalapeño. Children typically enjoy this drink with just a tiny pinch of cayenne or none at all.
    The recipe makes about 6 servings. For a large gathering, the recipe doubles easily.
    For a frozen version, freeze the strained pineapple juice in ice cube trays and blend with other ingredients before serving.
