Ingredients
4cupscubed watermelon
1/4cupfresh lime juice
2tablespoonshoney or agave nectar
8-10fresh mint leaves
2cupssparkling water
Ice cubes
Extra watermelon chunks and mint for garnish
Instructions
Put the watermelon chunks in a blender. Blend until smooth.
Strain the watermelon juice through a fine-mesh strainer into a pitcher.
Add lime juice and honey to the pitcher. Stir until the honey dissolves.
Place mint leaves in the pitcher and press gently with a wooden spoon to release the oils.
Fill glasses with ice cubes. Pour the watermelon mixture until glasses are 2/3 full.
Top each glass with sparkling water and stir gently.
Garnish with watermelon chunks and mint leaves.
Notes
Store extra watermelon juice in an airtight container for up to 2 days.The drink tastes best when served right away while the sparkling water is still fizzy.For a sweeter drink, add more honey one teaspoon at a time.Replace regular ice cubes with frozen watermelon chunks to prevent the drink from getting watery.This recipe makes 4 servings.
