  • Fine-mesh strainer
  • Pitcher
  • Ice cube tray
  • Tall glasses
  • Measuring cups and spoons
  • Wooden spoon or muddler

Ingredients

  • 4 cups cubed watermelon
  • 1/4 cup fresh lime juice
  • 2 tablespoons honey or agave nectar
  • 8-10 fresh mint leaves
  • 2 cups sparkling water
  • Ice cubes
  • Extra watermelon chunks and mint for garnish

Instructions

  • Put the watermelon chunks in a blender. Blend until smooth.
  • Strain the watermelon juice through a fine-mesh strainer into a pitcher.
  • Add lime juice and honey to the pitcher. Stir until the honey dissolves.
  • Place mint leaves in the pitcher and press gently with a wooden spoon to release the oils.
  • Fill glasses with ice cubes. Pour the watermelon mixture until glasses are 2/3 full.
  • Top each glass with sparkling water and stir gently.
  • Garnish with watermelon chunks and mint leaves.

Notes

Store extra watermelon juice in an airtight container for up to 2 days.
The drink tastes best when served right away while the sparkling water is still fizzy.
For a sweeter drink, add more honey one teaspoon at a time.
Replace regular ice cubes with frozen watermelon chunks to prevent the drink from getting watery.
This recipe makes 4 servings. Double the ingredients for larger groups.
