Ingredients

  • 6 cups cubed seedless watermelon
  • 1/2 cup fresh lime juice about 4-5 limes
  • 1/4 cup honey or agave nectar
  • 2 cups sparkling water chilled
  • Fresh mint leaves 8-10 leaves, plus extra for garnish
  • Ice cubes
  • Watermelon wedges for garnish

Instructions

  • Add watermelon cubes to the blender and blend until smooth.
  • Strain the watermelon puree through a fine mesh strainer into a pitcher.
  • Add lime juice and honey to the pitcher. Stir until honey dissolves completely.
  • Place mint leaves in the pitcher and muddle gently to release the oils.
  • Just before serving, add the cold sparkling water and stir gently.
  • Fill tall glasses with ice cubes and pour the mixture over ice.
  • Garnish each glass with a watermelon wedge and fresh mint leaves.

Notes

Store the watermelon puree mixture without sparkling water in the fridge for up to 24 hours.
Add sparkling water right before serving to keep the drink fizzy.
Adjust the honey amount to taste for extra sweetness.
Use frozen watermelon cubes instead of regular ice cubes to prevent drink dilution.
Makes 4-6 servings depending on glass size.
