Ingredients
6cupscubed seedless watermelon
1/2cupfresh lime juiceabout 4-5 limes
1/4cuphoney or agave nectar
2cupssparkling waterchilled
Fresh mint leaves8-10 leaves, plus extra for garnish

Instructions
Add watermelon cubes to the blender and blend until smooth.
Strain the watermelon puree through a fine mesh strainer into a pitcher.
Add lime juice and honey to the pitcher. Stir until honey dissolves completely.
Place mint leaves in the pitcher and muddle gently to release the oils.
Just before serving, add the cold sparkling water and stir gently.
Fill tall glasses with ice cubes and pour the mixture over ice.
Garnish each glass with a watermelon wedge and fresh mint leaves.
