Ingredients

For one serving:

  • 2 oz fresh peach puree about 1 medium peach, pitted and blended
  • 1 oz fresh lemon juice
  • ¾ oz ginger syrup*
  • 4 oz sparkling water
  • Ice cubes
  • Garnish: peach slice and fresh mint sprig

*For ginger syrup:

  • 1 cup water
  • 1 cup granulated sugar
  • 3 inches fresh ginger peeled and thinly sliced

Ripe, fresh peaches work best for this recipe. If peaches aren't in season, thawed frozen peaches can substitute. The homemade ginger syrup adds a spicy kick that balances the sweet peach flavor.

Instructions

Make ginger syrup (can be prepared ahead):

  • Combine water, sugar, and sliced ginger in a small saucepan.
  • Bring to a simmer over medium heat, stirring until sugar dissolves.
  • Reduce heat to low and simmer for 15 minutes.
  • Remove from heat, cool completely, and strain out ginger pieces.
  • Store in a sealed container in the refrigerator for up to two weeks.

Prepare the mocktail:

  • Add peach puree, lemon juice, and ginger syrup to a cocktail shaker with ice.
  • Shake vigorously for 15-20 seconds until well-chilled.
  • Strain into a highball glass filled with fresh ice.
  • Top with sparkling water and stir gently.
  • Garnish with a peach slice and mint sprig.

The shaking process helps blend the flavors together. Add the sparkling water after shaking to maintain its fizz.

    Notes

    This recipe can be easily modified to suit different tastes. For less sweetness, reduce the ginger syrup to ½ oz. Add more sparkling water for a lighter drink.
    Make a pitcher version for parties by multiplying the ingredients by the number of servings needed. Add the sparkling water just before serving to maintain carbonation.
    For a stronger ginger flavor, let the ginger steep in the syrup longer or add a few drops of ginger juice. The mocktail can be made kid-friendly by reducing the ginger syrup and adding a splash of lemonade.
    Store leftover peach puree in the refrigerator for up to 3 days or freeze in ice cube trays for future use.
