Here's what you'll need to make 4 servings:

  • 1/2 cup sugar
  • 1/2 cup water
  • 2 tablespoons dried culinary lavender
  • 1 cup freshly squeezed lemon juice about 6-8 lemons
  • 3 cups cold water
  • 1 cup sparkling water or club soda
  • Ice cubes
  • Lemon slices and lavender sprigs for garnish optional

Using fresh lemon juice makes a big difference in taste compared to bottled juice.

Instructions

Follow these steps to create your lavender lemonade:

  • Make lavender syrup: Combine sugar, 1/2 cup water, and lavender in a saucepan. Heat over medium, stirring until sugar dissolves. Remove from heat and let steep for 30 minutes.
  • Strain the syrup into a pitcher, discarding lavender.
  • Add lemon juice and 3 cups cold water to the pitcher. Stir well.
  • Chill the mixture in the fridge for at least 1 hour.
  • When ready to serve, add sparkling water and stir gently.
  • Pour over ice in tall glasses.

Garnish with lemon slices and lavender sprigs if desired.

    Notes

    You can adjust the sweetness by adding more or less syrup.
    For a stronger lavender flavor, steep the syrup longer.
    Make the base mixture ahead of time, but add sparkling water just before serving to keep it bubbly.
