Ingredients

  • 1 cup fresh grapefruit juice pink preferred
  • 2 tbsp thyme syrup sugar or honey
  • 1 tsp fresh lime juice
  • 0.5 cup sparkling water or club soda
  • ice cubes
  • fresh thyme sprigs for garnish
  • grapefruit wedges for garnish
  • mint leaves optional, for aroma
  • 1 tsp simple syrup optional, for extra sweetness

Instructions

  • Fill tall glasses halfway with ice cubes. Add fresh grapefruit juice and lime juice.
  • Pour in thyme syrup and gently stir.
  • Top with sparkling water or club soda. Add more simple syrup if you like it sweeter.
  • Garnish with thyme sprigs, grapefruit wedges, and mint leaves if desired. Serve immediately.

Notes

Pink grapefruit is brightest, but any grapefruit works. Let thyme simmer longer in the syrup for more herbal depth. Chill juice before mixing for the coldest, crispest mocktail. Add bubbles last for best fizz!
