Equipment

  • Cocktail shaker
  • Measuring jigger
  • Fine-mesh strainer
  • Mixing spoon
  • Champagne flute or tall glass
  • Small plate (for sugar-cinnamon rim)
  • Knife and cutting board
  • Ice cubes

Ingredients

  • 3 oz apple cider or apple juice
  • 1 oz cinnamon whiskey
  • 1 tsp honey or simple syrup
  • 1 pinch ground cinnamon
  • 4 oz sparkling wine or champagne, well-chilled
  • sugar and cinnamon mix for rim
  • 1 slice apple for garnish

Instructions

  • Rim a flute or tall glass with a sugar–cinnamon mix.
  • In a shaker, combine apple cider, cinnamon whiskey, honey, and a pinch of cinnamon. Add ice and shake about 10 seconds.
  • Strain into the prepared glass.
  • Gently top with chilled sparkling wine to keep the bubbles. Garnish with a thin apple slice.

Notes

Chill all components first so the bubbles last longer. For a mocktail, omit the whiskey and use more cider with sparkling water. When batching, mix the still ingredients in advance and top each glass with sparkling wine just before serving.
