Equipment

  • Cocktail shaker
  • Jigger or measuring cup
  • Strainer
  • Bar spoon
  • Citrus juicer
  • Small plate and salt (for rim)
  • Rocks glass or coupe glass

Ingredients

  • 2 oz white rum
  • 3 oz pineapple juice
  • 0.5 oz fresh lemon juice
  • 0.5 oz simple syrup 1:1 sugar and water
  • 1 pinch sea salt
  • ice cubes for shaking and serving
  • coarse salt for rim
  • pineapple wedge or lemon wheel for garnish (optional)

Instructions

  • Rim the glass: run a lemon wedge around the rim, then dip in coarse salt.
  • Fill a cocktail shaker halfway with ice. Add white rum, pineapple juice, fresh lemon juice, simple syrup, and a pinch of sea salt.
  • Shake firmly for 10–15 seconds until well chilled.
  • Strain into the prepared glass over fresh ice.
  • Garnish with a pineapple wedge or lemon wheel, if desired. Serve immediately.

Notes

Use white rum for a clean tropical profile; gold rum adds richer depth. Adjust simple syrup to taste, or add a splash of sparkling water for a lighter sip. Don’t overshake to avoid excess dilution.
