Ingredients

  • 2 ounces Salted Caramel Vodka

I pick a smooth ginger beer without extra heat, since the RumChata is creamy and sweet.

Instructions

  • I start by pouring some caramel sauce onto a shallow plate. I dip the rim of the mug into the sauce.
  • I sprinkle sea salt all around the rim, making sure it sticks.
  • I fill the mug with ice.
  • I measure and pour 2 ounces of salted caramel vodka and 2 ounces of RumChata into the mug.
  • I top it with 4 ounces of ginger beer, pouring slowly to help keep the bubbles.
  • I stir the drink gently with a bar spoon to mix the liquids without losing fizz.
  • I add a caramel candy, cinnamon stick, or apple slice as a garnish.
  • I serve the drink immediately so the ice stays solid and everything stays cold.

Notes

RumChata mixes best when cold, so I store it in the fridge before making the cocktail.
Some brands of ginger beer are stronger than others; I taste a few to find my favorite.
The caramel sauce and sea salt rim can get messy, so I stick to just enough sauce for a thin layer.
If I want a sweeter flavor, I add a caramel candy to the mug for extra caramel taste.
For people who don’t like salted rims, it’s fine to serve without salt.
I always use fresh ice cubes rather than ones that have started to melt to keep the drink at the right temperature.
