This tropical rum cocktail mixes fresh orange juice, grenadine, and coconut cream for a drink that looks like a sunset in a glass. It takes just 5 minutes to make and serves one person.
Add the white rum, orange juice, and coconut cream to the shaker.
Shake for 15-20 seconds until well chilled.
Fill a hurricane glass with fresh ice cubes.
Strain the mixture into the glass.
Slowly pour the grenadine down the side of the glass - it will sink to create the sunset effect.
Garnish with an orange slice and maraschino cherry.
Notes
The drink should show clear layers with red at the bottom, fading to orange, then white at the top. Fresh orange juice works better than bottled juice.Store coconut cream in the fridge after opening. It will stay fresh for up to 1 week. This recipe can be made alcohol-free by replacing the rum with pineapple juice. The drink can be served in any tall glass if a hurricane glass isn't available.
