Ingredients

  • 1 cup fresh lemon juice about 4–6 lemons
  • 0.5 cup sugar or honey, maple syrup, or other sweetener
  • 1 cup water for rosemary syrup
  • 2 cups cold water or sparkling, club soda, or tonic water
  • 3-4 sprigs fresh rosemary
  • ice cubes to serve
  • lemon slices for garnish
  • extra rosemary sprigs for garnish

Instructions

  • Combine sugar and 1 cup water in a small saucepan and heat until sugar dissolves. Add rosemary sprigs and steep for 15–20 minutes.
  • Strain the rosemary syrup into a pitcher and discard rosemary.
  • Add fresh lemon juice and 2 cups cold water (or sparkling/club soda) to the pitcher and stir well.
  • Taste and adjust sweetness or tartness with more sweetener or lemon juice if desired.
  • Fill glasses with ice and pour the mocktail over the ice.
  • Garnish each glass with a lemon slice and a rosemary sprig.

Notes

Make rosemary syrup ahead for easy prep. Swap in monk fruit, stevia, or other sweeteners for a lighter version. Try adding basil, thyme, or lavender for a twist. Fresh lemon juice is best. Double or triple for a crowd.
