Fill cocktail shaker with ice. Add gin, fresh grapefruit juice, and rosemary simple syrup.
Shake for 10–15 seconds until chilled.
Strain into a highball glass packed with fresh ice.
Top slowly with tonic water. Stir gently.
Garnish with a rosemary sprig and grapefruit wedge or slice.
